The ‘kormos’ was my favorite dessert when I was a child. I remember many times my mom prepating it to please us. For me it was a sweet and joyful procedure which I had to wait though impatiently. This is because the ‘kormos’ requires additional time to be frozen in the freezer in order to get the shape you see in the picture.
It is made from biscuits, cocoa powder, powdered sugar, eggs, condensed milk, margarine or butter or vitam and sometimes also liqueur of your choice. Apparently because of chocolate and cookies it is the favorite dessert of many children and not only. In Thessaloniki many taverns are serving small portions of the ‘kormos’ for free after you finish your eating. It is a habit that has remained for years. After eating and before the bill arrives in an indication to ‘sweeten’ the customer before the payment the taverns in Thessaloniki serve small portions of desserts for free. If you visit Thessaloniki you will find the ‘kormos’ also in most of the pastry shops in the center the city. The recipe might have some variations though depending on the cook.
