The eggplant salad or in greek ‘melitzanosalata’ is very simple but also very enjoyable dish. It is made using eggplants that are cooked on flames and peeled off in order to keep their soft internal crumb. You will find the ‘melitzanosalata’ in different variations but its main components are the eggplant, parsley, garlic, olive oil and vinegar. Several times you will also see in the dish small pieces of Fiorina peppers, which relish even more taste. There is a big difference in taste when this salad is freshly prepared and not from a can in ointment form. If it is in ointment form it will just will not taste as what I try to propose to you. You will know if it is fresh when it will look as shown in the photo of the article. If it is not like this there is no reason to try it. When you taste the genuine you will most probably want to get a second dish as well. The ‘melitzanosalata’ is a summer salad because the eggplants during the Greek summer thrive due to high temperatures in Greece (which is just what they need to grow healthy)!
